Ingredients

1 lb ground turkey

1 cup fresh spinach, finely chopped

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup ricotta cheese

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1/2 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil (for frying)

1 cup heavy cream

1/2 cup chicken broth

1/2 tsp red pepper flakes (optional)

Fresh basil, for garnish

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Meatball Mixture: In a large mixing bowl, combine ground turkey, finely chopped spinach, breadcrumbs, Parmesan cheese, ricotta cheese, egg, minced garlic, onion powder, dried oregano, salt, and pepper. Mix well until all ingredients are well incorporated.

Shape Meatballs: Using your hands, form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Bake Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes or until fully cooked and golden brown.

Make Creamy Sauce: While the meatballs are baking, heat olive oil in a large skillet over medium heat. Pour in the heavy cream and chicken broth, stirring to combine. Add red pepper flakes if you like a bit of heat.

Add Meatballs to Sauce: Once the cream sauce has simmered for a few minutes, gently add the baked meatballs to the skillet. Lower the heat and let them simmer in the sauce for about 5-7 minutes until heated through and coated in the creamy goodness.

Final Touches: Taste the sauce and adjust seasoning with salt and pepper if needed. Garnish with fresh basil before serving.

Serve: Plate the creamy spinach turkey meatballs over pasta, rice, or enjoy them on their own!
