Creamy Sweet Potato Mac & Cheese

2 medium sweet potatoes, peeled and cubed

8 oz elbow macaroni or pasta of your choice

1 cup milk (whole, almond, or oat milk for a dairy-free option)

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup cream cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and pepper, to taste

1/2 cup breadcrumbs (panko works great)

2 tablespoons olive oil or melted butter

Fresh parsley or chives for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes or until tender. Drain them and then mash the sweet potatoes until smooth. Set aside.

    Cook the Pasta: In the same pot, cook the elbow macaroni according to package instructions until al dente. Drain and return to the pot.

      Make the Cheese Sauce: In a saucepan over medium heat, combine the milk, mashed sweet potatoes, garlic powder, onion powder, nutmeg, salt, and pepper. Stir until well mixed and heated through (do not let it boil).

        Add the Cheese: Remove the saucepan from heat and stir in the grated cheddar cheese, mozzarella cheese, and cream cheese until melted and creamy.

          Combine: Pour the cheese sauce over the cooked pasta and stir until evenly coated. Adjust seasoning if necessary.

            Prepare the Topping: In a small bowl, mix the breadcrumbs with olive oil or melted butter. Season with a pinch of salt and pepper.

              Bake: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish. Evenly sprinkle the breadcrumb mixture over the top. Bake in the oven for 20-25 minutes, or until the top is golden brown and crispy.
