12 oz fettuccine or pasta of your choice

2 tablespoons olive oil

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon sugar

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup heavy cream

1 cup fresh basil leaves, torn

1/2 cup grated Parmesan cheese

Extra basil and cheese for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant.

      Add Tomatoes and Season: Pour in the crushed tomatoes and stir in the sugar, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Let it simmer for about 10 minutes, allowing the sauce to thicken slightly.

        Create Creaminess: Reduce the heat to low, and slowly stir in the heavy cream, letting it combine well with the tomato sauce. Allow it to simmer for an additional 5 minutes, stirring occasionally.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing to ensure it's well coated. If the sauce is too thick, add some of the reserved pasta water gradually until you reach the desired consistency.
