8 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

½ teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

4 cups fresh spinach

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, but not burnt.

      Add Tomatoes: Pour in the diced tomatoes with their juices. Stir in the red pepper flakes (if using) and Italian seasoning. Simmer for about 5 minutes, allowing the flavors to meld.

        Incorporate Cream: Lower the heat and stir in the heavy cream, mixing until well combined. Let the sauce simmer gently for another 3-4 minutes until it begins to thicken.

          Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted. This should take about 2-3 minutes.

            Combine Pasta and Sauce: Add the drained penne pasta to the skillet, tossing to coat it well in the creamy tomato sauce. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.

              Cheese and Seasoning: Stir in the grated Parmesan cheese, mixing until it melts into the sauce. Season with salt and pepper to taste.
