12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

4 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant but not browned.

      Add Tomatoes and Cream: Stir in the diced tomatoes (with juices) and cook for 2-3 minutes. Then, pour in the heavy cream and mix until well combined.
