Creamy Tzatziki Chicken Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup plain Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, lemon juice, smoked paprika, salt, and black pepper. Add the cubed chicken and toss until evenly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight for more flavor.

    Prepare the Tzatziki: While the chicken is marinating, prepare the tzatziki sauce. In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, dill, and a pinch of salt. Stir well to combine. Adjust seasoning to taste, and refrigerate until ready to serve.

      Skewering the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the skewers, leaving a little space between each piece to ensure even cooking.

        Grill the Skewers: Place the chicken skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Once the skewers are cooked, remove them from the grill and let them rest for a couple of minutes. Serve the skewers hot with a generous dollop of creamy tzatziki on the side for dipping.
