1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp coriander

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup bread crumbs (panko or regular)

2 tbsp olive oil

4 large whole wheat wraps or pita breads

1 cup lettuce, shredded

1 ripe tomato, diced

1 cucumber, sliced

1/2 cup tahini sauce (or your preferred sauce)

Prepare the Chickpeas: In a food processor, add the drained chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until you reach a coarse mixture. Do not overprocess; it should be a bit chunky.

    Form the Falafel Mixture: Transfer the mixture to a bowl and stir in the bread crumbs. If the mixture is too wet to form into balls, add a bit more bread crumbs until it holds together.

      Shape the Falafel: Using your hands, shape the mixture into small balls or patties, approximately the size of a golf ball.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Coat Falafel with Oil: Lightly brush or spray the falafel balls with olive oil to ensure they get crispy when cooked.
