2 medium zucchini, sliced into sticks

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

2 large eggs

¼ cup all-purpose flour

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up and to prevent sticking.

    Prepare the Zucchini: Take the zucchini and slice them into uniform sticks, about 1/4 inch thick, for even cooking.

      Set Up Breading Station: In a shallow bowl, place flour. In a second shallow bowl, whisk the eggs. In a third bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.

        Bread the Zucchini: Dip each zucchini stick first into the flour, ensuring it's coated evenly, then into the egg, and finally into the breadcrumb mixture, pressing gently to adhere the crumbs.
