Ingredients

1 can (15 oz) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1/2 cup of your favorite BBQ sauce

1 head of romaine or butter lettuce (for boats)

1/2 cup cherry tomatoes, halved

1 avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, onion powder, cumin, cayenne pepper (if using), salt, and pepper. Stir well to coat the chickpeas evenly.

Bake the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until they're crispy and golden, shaking the pan halfway through to ensure even cooking.

Mix with BBQ Sauce: Once the chickpeas are crispy, remove them from the oven and drizzle the BBQ sauce over them. Stir to combine well and return to the oven for an additional 5-10 minutes to caramelize the sauce.

Prepare the Lettuce Boats: While the chickpeas are finishing, wash and separate the lettuce leaves to create boats. Select sturdy leaves to hold the filling.

Assemble the Boats: Once the chickpeas are ready, fill each lettuce boat with a generous scoop of the BBQ chickpeas. Top with halved cherry tomatoes, diced avocado, and chopped cilantro.

Serve: Squeeze fresh lime juice over the assembled boats for added flavor. Serve immediately as an appetizer or light meal.
