Ingredients
  

8 small corn tortillas

1 cup thinly sliced salami

1 cup thinly sliced prosciutto

1 cup sliced smoked gouda cheese

1 cup sliced aged cheddar cheese

½ cup mixed olives (green, kalamata, and Castelvetrano), pitted and halved

½ cup cherry tomatoes, halved

¼ cup fresh arugula

¼ cup roasted red peppers, sliced

1 avocado, sliced

¼ cup fresh herbs (basil, parsley, or chives), finely chopped

2 tbsp olive oil

Sea salt and freshly cracked black pepper, to taste

Optional: Hot honey for drizzling

Prepare Tacos: Heat a skillet over medium heat. Lightly brush both sides of the corn tortillas with olive oil. Once the skillet is hot, add the tortillas one at a time, cooking for about 30 seconds on each side until they are slightly golden and crispy. Transfer to a plate and keep warm.

    Layer the Ingredients: On each crispy tortilla, start layering your charcuterie. Begin with a piece of salami, then add some prosciutto, followed by a slice of smoked gouda and aged cheddar.

      Add Toppings: Top each taco with a handful of mixed olives, cherry tomato halves, slices of roasted red peppers, and a few slices of avocado. Sprinkle with fresh arugula for a peppery crunch, and finish with a generous sprinkle of fresh herbs.
