Crispy Coconut Chicken Strips

1 lb chicken breast, cut into strips

1 cup shredded coconut (sweetened or unsweetened)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 tsp cayenne pepper (optional, for heat)

Cooking spray or oil for frying

Prep the Chicken: Begin by placing the chicken strips in a bowl. Season with salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper if using. Toss to coat the chicken evenly.

    Set Up Breading Station: In three separate shallow bowls, place the flour in the first bowl, beaten eggs in the second bowl, and mix the shredded coconut with the panko breadcrumbs in the third bowl.

      Bread the Chicken:

        - Dredge each chicken strip in flour, shaking off any excess.

          - Dip it into the beaten eggs, ensuring it's fully coated.

            - Finally, press the chicken strip into the coconut and panko mixture until well coated. Place on a baking sheet and repeat with remaining chicken.

              Chill the Strips: For extra crispiness, place the breaded chicken strips in the refrigerator for about 15-20 minutes to allow the coating to set.

                Cook the Chicken:

                  - For Baking: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the chicken strips in a single layer. Lightly spray the tops with cooking spray. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.

                    - For Frying: In a large skillet, heat about 1/2 inch of oil over medium heat. Carefully add chicken strips in batches, frying for about 3-4 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.

                      Serve: Enjoy the crispy coconut chicken strips with your favorite dipping sauces such as sweet chili sauce, honey mustard, or a tangy avocado dip.
