3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon salt (adjust to taste)

¼ teaspoon freshly ground black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese for extra flavor

Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to make the potatoes crispy.

    Prep the Potatoes: Wash the russet potatoes thoroughly without peeling them. Cut each potato lengthwise into wedges, approximately 8 wedges per potato.

      Soak the Wedges: For extra crispiness, soak the potato wedges in a bowl of cold water for about 30 minutes. This step helps to remove excess starch.

        Season the Wedges: After soaking, drain the potato wedges and pat them dry with a clean kitchen towel. In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and black pepper.

          Coat the Wedges: Add the dried potato wedges to the bowl and toss them well, ensuring each wedge is coated evenly with the herb mixture.

            Arrange on a Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup. Spread the seasoned potato wedges in a single layer, making sure they’re not crowded for maximum crispiness.
