2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

8 oz fresh mozzarella cheese, cut into thick slices

1 tablespoon olive oil (for frying)

Fresh basil leaves (for garnish, optional)

Marinara sauce (for dipping)

Prep the Onions: Begin by slicing the onions into thick rings, about 1 inch in width. Separate the rings and set aside.

    Set Up Breading Station: In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and combine panko breadcrumbs, garlic powder, paprika, salt, and pepper in the third bowl.

      Bread the Onion Rings: Take an onion ring and coat it in the flour, shaking off any excess.
