8 oz (225g) fresh mozzarella cheese, cut into bite-sized cubes

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper, to taste

Oil for frying (vegetable or canola)

Marinara sauce, for dipping (optional)

Instructions
 

Prep the Cheese: Start by cutting the fresh mozzarella into bite-sized cubes, about 1 inch each. Place them on a plate and freeze for about 30 minutes until they are firm but not completely frozen. This helps prevent them from melting too quickly while frying.

    Setup the Breading Station: In three separate bowls, set up your breading station.

      - In the first bowl, place the flour. Season it with a pinch of salt and pepper.

        - In the second bowl, beat the eggs until smooth.

          - In the third bowl, mix together the breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, basil, and additional salt and pepper.

            Coat the Mozzarella: Take each mozzarella cube from the freezer and coat it in flour, shaking off excess. Next, dip it into the beaten eggs to fully coat, and then roll it in the breadcrumb mixture pressing gently to ensure it sticks. Repeat with all cheese cubes.

              Heat the Oil: In a deep skillet or pot, pour in enough oil to submerge the bites (about 2 inches deep) and heat over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of bread; if it sizzles and bubbles, it's time to fry.

                Fry the Bites: Carefully add a few breaded mozzarella bites at a time to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes until they turn golden brown and crispy, flipping halfway through if necessary.

                  Drain Excess Oil: Using a slotted spoon, remove the bites from the oil and transfer them to a paper towel-lined plate to drain any excess oil. Repeat until all bites are cooked.
