Crispy Mushroom Melt Wraps

Ingredients
  

2 cups fresh mushrooms (shiitake or cremini), sliced

1 cup shredded mozzarella cheese

1 cup cream cheese, softened

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon soy sauce

Salt and pepper to taste

4 large flour tortillas (or wraps of your choice)

¼ cup fresh parsley, chopped (for garnish)

Optional: Hot sauce for serving

Instructions
 

Sauté the Mushrooms:

    In a large skillet over medium heat, add the olive oil. Once hot, add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and tender. Stir occasionally.

      Add Flavor:

        Add the minced garlic, thyme, soy sauce, salt, and pepper to the skillet. Stir for another 2 minutes until fragrant. Remove from heat and set aside to cool slightly.

          Prepare the Cheese Mixture:

            In a medium bowl, combine the cream cheese and half of the shredded mozzarella cheese. Mix until smooth and well combined.

              Assemble the Wraps:

                Lay the flour tortillas flat. Spread a generous layer of the cream cheese mixture onto each tortilla. Evenly distribute the sautéed mushroom mixture over the cream cheese, then sprinkle the remaining mozzarella cheese on top.

                  Roll the Wraps:

                    Fold the sides of each tortilla inward and roll tightly from the bottom to the top, securing the filling inside.

                      Crisp the Wraps:

                        In the same skillet used for the mushrooms (wiped clean), add a splash of olive oil over medium heat. Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

                          Serve:

                            Once crispy, remove the wraps from the skillet and let them cool for a minute. Cut them in half diagonally. Garnish with fresh parsley and serve with hot sauce, if desired.
