Crispy Parmesan Avocado Fries

Ingredients
  

2 ripe avocados

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 cup all-purpose flour

2 large eggs

Cooking spray or olive oil for drizzling

Fresh cilantro and lime wedges for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out the flesh. Cut each half into 4-6 wedges, depending on how thick you'd like your fries. Set aside.

      Create the Breading Station:

        - In one shallow dish, place the flour.

          - In a second shallow dish, beat the eggs until smooth.

            - In a third shallow dish, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well.

              Coat the Avocado Wedges: Working with one avocado wedge at a time, first dredge it in the flour, shaking off any excess. Then dip it into the beaten eggs, letting the excess drip off. Finally, coat it in the Parmesan-panko mixture, pressing gently to ensure the coating adheres well. Repeat with all the avocado wedges.

                Arrange on Baking Sheet: Place the coated avocado wedges on the prepared baking sheet in a single layer. Lightly spray or drizzle olive oil over the fries to promote crispiness.

                  Bake: Bake in the preheated oven for 15-20 minutes or until golden brown and crispy, flipping the fries halfway through for even cooking.

                    Serve: Once done, remove them from the oven and let them cool for a couple of minutes. Serve warm, garnished with fresh cilantro and lime wedges if desired.
