1 lb (about 450g) large carrots, peeled and cut into fry shapes

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs (for extra crunch)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: In a large bowl, toss the cut carrots with the olive oil until they are evenly coated.

      Mix the Coating: In another bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to create a uniform coating mixture.

        Coat the Carrots: Working in batches, take a handful of the oiled carrot fries and dip them into the breadcrumb mixture, ensuring they are fully coated. Place the coated fries in a single layer on the prepared baking sheet.

          Bake: Bake in the preheated oven for 20 to 25 minutes, flipping halfway through, until the carrot fries are golden brown and crispy.

            Garnish and Serve: Once done, remove from the oven and let cool for a couple of minutes. Garnish with freshly chopped parsley, if desired, and serve hot with your favorite dipping sauce!
