2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 large eggs

¼ cup all-purpose flour

    Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half widthwise, then slice each half into long wedges (similar to fries). Aim for uniform size for even cooking.

      Set Up Breading Stations: In one shallow bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, mix together the breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.
