Crispy Pita Nachos with Ranch Chicken

4 large whole wheat pitas

2 cups cooked chicken, shredded (use rotisserie for ease)

1/2 cup ranch dressing (plus more for drizzling)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cherry tomatoes, quartered

1/2 cup black olives, sliced

1/4 cup fresh cilantro, chopped

1 jalapeño, sliced (optional for heat)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) while you prepare the ingredients.

    Prepare the Pitas: Cut each pita into triangles. Place them on a baking sheet and brush lightly with olive oil. Sprinkle with a pinch of salt and bake for about 8-10 minutes, or until they're golden and crispy.

      Mix the Chicken: In a medium bowl, combine the shredded chicken with ranch dressing, garlic powder, onion powder, and smoked paprika. Mix well until the chicken is coated.

        Assemble the Nachos: Once the pita chips are ready, remove them from the oven and spread half of them on a large oven-safe platter. Layer half of the ranch chicken mixture on top, followed by half of the cheddar and mozzarella cheeses. Add half of the cherry tomatoes, olives, and jalapeños (if using).

          Repeat Layers: Add another layer with the remaining pita chips, the rest of the ranch chicken, the remaining cheeses, tomatoes, olives, and jalapeños.

            Bake Again: Place the assembled nachos back in the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and melted.

              Garnish and Serve: Remove from the oven and sprinkle the nachos with fresh cilantro. Drizzle more ranch dressing on top and serve with lime wedges on the side.
