Crispy Smashed Baby Potatoes

1.5 pounds baby potatoes

1/4 cup olive oil

3 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1/2 teaspoon chili flakes (optional for kick)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper for easy cleanup.

    Boil Potatoes: Place the baby potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat and cook for about 15-20 minutes or until the potatoes are fork-tender. Drain and let them cool slightly.

      Smash the Potatoes: Once cooled, transfer the potatoes to the prepared baking sheet. Using the bottom of a glass or a potato masher, gently press down on each potato until it's smashed but still intact. Aim for about 1/2 inch thickness.

        Prepare Garlic Oil: In a small bowl, whisk together the olive oil, minced garlic, sea salt, black pepper, smoked paprika, rosemary, and chili flakes (if using).

          Drizzle and Coat: Drizzle the garlic oil mixture liberally over each smashed potato, ensuring they are evenly coated. Use a brush or spoon to spread the oil if necessary.

            Roast them Crispy: Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes, or until they are golden brown and crispy on the edges.
