1 cup shredded cabbage

1 cup grated carrots

1/2 cup bean sprouts

1/2 cup cooked shiitake mushrooms, finely chopped

1/2 cup ground pork or tofu (for a vegetarian option)

2 green onions, finely chopped

1 tablespoon fish sauce (or soy sauce for vegetarian option)

1 teaspoon sugar

1/2 teaspoon salt

1/2 teaspoon black pepper

12 rice paper wrappers

Vegetable oil (for frying)

Instructions
 

Prep the Filling: In a large mixing bowl, combine shredded cabbage, grated carrots, bean sprouts, chopped shiitake mushrooms, ground pork (or tofu), green onions, fish sauce (or soy sauce), sugar, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

    Moisten the Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds, or until it becomes soft and pliable. Remove and lay it flat on a clean, dry surface.

      Assemble the Rolls: Place about 2 tablespoons of the filling close to the edge of the wrapper closest to you. Fold the sides in over the filling, and roll the wrapper tightly away from you to form a cylinder. Make sure the filling is sealed inside by pressing the edges slightly.

        Repeat: Continue to hydrate, fill, and roll the remaining wrappers and filling until all are used up.

          Heat the Oil: In a large skillet or deep frying pan, add vegetable oil to a depth of about 1 inch. Heat over medium-high heat until the oil reaches 350°F (175°C).

            Fry the Spring Rolls: Carefully add a few spring rolls to the hot oil, being sure not to overcrowd the pan. Fry for about 4-5 minutes, turning occasionally, until they are golden brown and crispy.

              Drain the Rolls: Remove the spring rolls from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

                Serve: Serve the crispy spring rolls hot with a side of sweet chili sauce or hoisin sauce for dipping. Enjoy your delicious creation!
