12 oz. penne pasta

1 can (15 oz.) pumpkin puree

2 cups vegetable broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried sage

½ tsp nutmeg

½ tsp salt

¼ tsp black pepper

1 cup grated Parmesan cheese

1 cup fresh spinach, chopped (optional)

Chopped parsley for garnish

Prepare the Base: In the bottom of your crockpot, combine the pumpkin puree, vegetable broth, heavy cream, diced onion, minced garlic, thyme, sage, nutmeg, salt, and black pepper. Stir until everything is well blended.

    Add the Pasta: Add the uncooked penne pasta directly into the crockpot mixture. Make sure the pasta is fully submerged in the sauce to ensure even cooking.

      Cook: Cover the crockpot and cook on low for 4 hours. If you are short on time, you can cook on high for about 2 hours. Stir occasionally if possible.
