1 cup coconut milk (full fat for creaminess)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon olive oil

1 tablespoon maple syrup (optional, for sweetness)

Fresh herbs (like cilantro or parsley) for garnish

Optional toppings: pumpkin seeds, croutons, or a drizzle of olive oil

Prep the Vegetables: Start by washing and peeling the sweet potatoes. Cube them into bite-sized pieces for even cooking. Dice the onion and mince the garlic.

    Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then stir in the minced garlic and sauté for another 1-2 minutes until fragrant.

      Combine Ingredients in Crockpot: Transfer the sautéed onion and garlic into your crockpot. Add the cubed sweet potatoes, vegetable broth, cumin, smoked paprika, salt, and pepper. If you prefer a sweeter soup, stir in the maple syrup at this point.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sweet potatoes are tender and easily mashable.

          Blend for Creaminess: Once cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender. If using a blender, allow the soup to cool slightly to avoid splattering.

            Stir in Coconut Milk: After blending, stir in the coconut milk for a creamy texture. Adjust seasoning with more salt or pepper if needed.
