Crockpot Italian Meatball Soup

1 pound ground beef or ground turkey

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 large egg

2 teaspoons dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

6 cups beef broth

1 can (15 oz) diced tomatoes (with juices)

2 cups chopped kale or spinach

1 cup sliced carrots

1 cup diced zucchini

1 cup chopped bell peppers (any color)

1 can (15 oz) cannellini beans, rinsed and drained

2 teaspoons Italian seasoning

Fresh basil and additional Parmesan for garnish

Prepare the Meatballs: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, grated Parmesan, minced garlic, egg, oregano, salt, black pepper, and crushed red pepper flakes (if using). Mix until just combined. Avoid overmixing as this can make the meatballs tough.

    Form the Meatballs: Roll the mixture into small meatballs, about 1 inch in diameter. You should have approximately 20-24 meatballs.

      Preheat the Crockpot: Turn your Crockpot on to the low setting while you prepare the other ingredients.

        Add the Base Ingredients: Pour the beef broth and diced tomatoes into the Crockpot. Stir to combine.

          Add Vegetables and Seasoning: Add the chopped kale, sliced carrots, diced zucchini, chopped bell peppers, cannellini beans, and Italian seasoning into the broth mixture. Give it a good stir.

            Add Meatballs: Gently place the meatballs into the Crockpot, ensuring they are mostly submerged in the broth and vegetable mixture.
