Crunchy Air-Fried Breakfast Wrap

4 large tortillas (flour or whole wheat)

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup chopped cooked bacon or sausage

1 cup diced bell peppers (red and green)

1/2 cup diced onions

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

Cooking spray (for air fryer)

Prep the Filling: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper. Heat the olive oil in a skillet over medium heat. Add the diced onions and bell peppers, sautéing until they are softened (about 3-4 minutes). Add the egg mixture and cook, stirring frequently, until the eggs are fully scrambled and cooked through. Remove from heat.

    Combine Ingredients: Add the chopped bacon or sausage to the scrambled eggs and mix well. Sprinkle in the shredded cheddar cheese and stir until combined.

      Assemble the Wraps: Place a large tortilla on a flat surface. Spoon an equal amount of the egg mixture onto the center of each tortilla. Fold the sides in and then roll the tortilla tightly from the bottom to the top, ensuring the filling is well enclosed. Repeat this for all tortillas.

        Prepare for Air Frying: Preheat your air fryer to 380°F (193°C). Lightly spray the air fryer basket with cooking spray. Brush the outside of each wrap with a little additional olive oil to help achieve a golden-brown, crunchy texture.

          Air Fry the Wraps: Place the wrapped tortillas seam-side down in the air fryer basket. Cook in batches, if necessary, for about 8-10 minutes or until they are golden brown and crispy, flipping halfway through for even cooking.

            Serve: Once done, remove the wraps from the air fryer and let them cool slightly. Cut in half and serve warm with your favorite dipping sauces like salsa, sour cream, or guacamole.
