1 medium eggplant, sliced into ½-inch rounds

1 cup breadcrumbs (Panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

2 large eggs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Marinara sauce (for serving, optional)

Prepare the Eggplant: Start by salting the eggplant slices. Lay them out in a single layer on a baking sheet or clean surface, sprinkle both sides generously with salt, and let them sit for about 30 minutes. This will help draw out excess moisture and bitterness. Rinse the slices under cold water and pat them dry with paper towels.

    Make the Breading Station: In a shallow bowl, whisk the eggs and olive oil together. In another shallow bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well.
