1 medium carrot, cut into thin sticks

1 red bell pepper, cut into thin strips

1 yellow bell pepper, cut into thin strips

1 cup green beans, trimmed and halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

¾ cup whole-wheat breadcrumbs (or panko for extra crunch)

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Prep the Veggies: Begin by washing all the vegetables thoroughly. Cut the zucchini, carrot, and bell peppers into thin sticks, and prepare the green beans by trimming and halving them.

    Make the Coating: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to form a marinade.

      Coat the Veggies: Add the cut veggies to the bowl with the marinade and toss them until all pieces are evenly coated.

        Prepare the Breading: In another bowl, mix the whole-wheat breadcrumbs and Parmesan cheese (if using) thoroughly.
