2 cups rolled oats

1 cup finely chopped apples (about 2 medium apples, peeled and cored)

1/2 cup almond or peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1/4 cup brown sugar (packed)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts or seeds (like walnuts or pumpkin seeds, optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving a little overhang for easy removal later.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Mix well to distribute all the dry ingredients evenly.

      Mix Wet Ingredients: In a separate bowl, combine the almond or peanut butter, honey or maple syrup, brown sugar, and vanilla extract. Use a whisk or fork to mix until smooth and well combined.

        Incorporate Apples: Gently fold in the chopped apples, mixing until they are well-coated in the wet mixture. If desired, add in the optional nuts/seeds and dried fruits at this stage.

          Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir until everything is fully combined.

            Spread in Baking Dish: Transfer the mixture to the prepared baking dish. Use a spatula to spread it evenly, pressing down firmly to pack it tightly.
