2 ripe avocados

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 cup all-purpose flour (or almond flour for gluten-free)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil spray or cooking spray

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Avocados: Cut the avocados in half, remove the pits, and carefully scoop the flesh out of the skin. Slice the avocado halves into wedges or strips, about 1/2 inch thick.

      Set Up Breading Station: In three separate shallow bowls, set up your breading station:

        - In the first bowl, add the flour and sprinkle with a little salt and pepper.

          - In the second bowl, beat the eggs lightly.

            - In the third bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper.

              Coat the Avocado Slices:

                - Dip each avocado slice first into the flour, making sure to coat both sides evenly.

                  - Next, dip it into the beaten eggs, allowing any excess to drip off.

                    - Finally, coat the slice in the panko mixture, pressing gently to adhere the breadcrumbs to the avocado.

                      Arrange on Baking Sheet: Place the coated avocado slices on the prepared baking sheet, ensuring they are spaced apart to allow for even cooking.

                        Spray with Olive Oil: Lightly spray the tops of the avocado slices with olive oil spray. This will help them become golden brown and crispy while baking.
