2 ripe avocados

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Avocados: Cut the avocados in half, remove the pits, and carefully scoop the flesh out of the skin. Slice the avocado halves into wedges or strips, about 1/2 inch thick.

      Set Up Breading Station: In three separate shallow bowls, set up your breading station:

        - In the first bowl, add the flour and sprinkle with a little salt and pepper.
