Crunchy BBQ Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

½ cup BBQ sauce (your favorite brand)

4 large whole wheat tortillas or wraps

1 cup shredded lettuce

1 cup diced tomatoes

½ cup diced red onion

½ cup shredded cheese (optional, use vegan cheese if preferred)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Toss until the chickpeas are evenly coated with the spices.

      Roast the chickpeas: Spread the seasoned chickpeas on the prepared baking sheet in a single layer. Roast in the oven for 25-30 minutes or until they are golden brown and crunchy, stirring halfway through for even cooking.

        Add BBQ sauce: Once the chickpeas are roasted, remove from the oven and let them cool for a few minutes. Drizzle the BBQ sauce over the chickpeas and toss to combine, ensuring they are well-coated.

          Assemble the wraps: Lay a tortilla flat on a clean surface. Start by placing a generous handful of shredded lettuce in the center, followed by diced tomatoes, red onion, and a portion of the BBQ chickpeas. If using, sprinkle shredded cheese on top.

            Wrap it up: Fold in the sides of the tortilla and then roll it tightly from the bottom to top to secure all the fillings. Repeat this step for the remaining tortillas.

              Serve: Slice each wrap in half and serve with extra BBQ sauce for dipping. Garnish with fresh cilantro or parsley if desired.
