Crunchy Buffalo Cauliflower Wraps

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or non-dairy milk with 1 tbsp vinegar)

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup buffalo sauce (adjust to taste)

4 large whole wheat or spinach wraps

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded carrots

½ cup ranch or blue cheese dressing (for drizzling)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Cauliflower: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly add the buttermilk while whisking until combined. The batter should not be too thick or too runny.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing the excess to drip off. Then, roll it in the breadcrumbs to coat thoroughly. Place the coated florets in a single layer on the prepared baking sheet.

        Bake the Cauliflower: Bake for 20-25 minutes, or until the cauliflower is golden brown and crispy, flipping halfway through for even cooking.

          Add Buffalo Sauce: Once the cauliflower is out of the oven, drizzle the hot buffalo sauce over the florets and gently toss to coat.
