4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

½ cup red bell pepper, thinly sliced

½ cup green onions, chopped

½ cup roasted peanuts, coarsely chopped

⅓ cup fresh cilantro, chopped

¼ cup rice vinegar

3 tablespoons sesame oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 teaspoon ginger, freshly grated

½ teaspoon garlic powder

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, grated carrot, sliced red bell pepper, and chopped green onions.

    Make the Dressing: In a separate bowl, whisk together the rice vinegar, sesame oil, soy sauce, honey (or maple syrup), grated ginger, garlic powder, and a pinch of salt and pepper until well combined.
