Ingredients

4 cups green cabbage, thinly sliced

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1 cup broccoli florets

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons vegetable oil

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon sesame seeds

Salt and pepper to taste

Optional: 1 cup cooked quinoa or brown rice for serving

Instructions

Prepare the Vegetables: Start by washing and slicing all your vegetables. Make sure to julienne the carrots and slice the bell pepper and cabbage into thin strips for even cooking.

Heat the Wok: In a large wok or skillet, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.

Cook the Cabbage: Add the sliced cabbage to the wok. Stir-fry for about 3-4 minutes until it begins to wilt.

Add the Remaining Vegetables: Toss in the carrots, bell pepper, snap peas, and broccoli florets. Stir-fry for an additional 5-7 minutes, ensuring that the vegetables remain vibrant and slightly crunchy.

Season the Stir-Fry: Pour in the soy sauce, sesame oil, and rice vinegar. Toss everything together, allowing the sauce to coat the vegetables evenly. Cook for another 2-3 minutes.

Finish With Green Onions and Sesame: Once the vegetables are tender yet crunchy, remove from heat. Stir in the chopped green onions and sprinkle with sesame seeds. Season with salt and pepper to taste.

Serve: If desired, serve the stir-fry over a bed of cooked quinoa or brown rice for added texture and nutrients. Enjoy your crunchy cabbage stir-fry bowl hot!
