Crunchy Chili Lime Corn Salad

Ingredients
  

3 cups fresh corn kernels (about 5-6 ears of corn)

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 avocado, diced

1/2 cup fresh cilantro, chopped

1 teaspoon chili powder

1/2 teaspoon cumin

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper, to taste

1 cup crushed tortilla chips (for crunch)

Instructions
 

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for about 4-5 minutes until tender. Drain, and then immerse in an ice bath to halt cooking. If using frozen corn, simply thaw and drain.

    Mix the Veggies: In a large mixing bowl, combine the cooked corn, cherry tomatoes, diced red bell pepper, red onion, and avocado. Toss gently to combine.

      Whisk the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper until well combined. Taste and adjust seasoning as needed.

        Combine & Serve: Pour the dressing over the corn salad and mix gently until all the ingredients are coated. Just before serving, add in the crushed tortilla chips for added crunch and toss lightly.

          Garnish: Finish with fresh cilantro on top for a pop of color and flavor.

            Chill: For the best flavor, let the salad sit in the refrigerator for about 30 minutes before serving (optional).
