2 medium zucchinis

1 cup breadcrumbs (panko works best for crunch)

1/2 cup grated Parmesan cheese

1 tablespoon lemon zest (about 1 lemon)

2 teaspoons dried dill weed

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon lemon juice

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini into 1/4-inch thick rounds. Make sure to slice evenly so they cook uniformly.
