1 large bunch of kale (preferably lacinato or curly)

2 tablespoons olive oil

1 tablespoon sesame oil

1 tablespoon soy sauce (or tamari for gluten-free option)

1 tablespoon sesame seeds (white, black, or a mix)

1 teaspoon garlic powder

½ teaspoon smoked paprika (optional for added flavor)

½ teaspoon sea salt (adjust to taste)

A pinch of red pepper flakes (optional for heat)

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone mat to prevent sticking.

    Prepare the Kale: Rinse the kale thoroughly and pat it dry with a clean kitchen towel. Remove the thick stems from the leaves, and tear the kale into bite-sized pieces.

      Mix the Dressing: In a large mixing bowl, whisk together the olive oil, sesame oil, soy sauce, garlic powder, smoked paprika, sea salt, and red pepper flakes until well combined.

        Coat the Kale: Add the torn kale pieces to the bowl and massage the oil mixture into the leaves until they're evenly coated. Make sure each piece is well covered, as this will help them crisp up nicely.

          Sprinkle the Sesame Seeds: Once coated, sprinkle the sesame seeds over the kale and toss gently again to distribute the seeds evenly.

            Bake the Chips: Spread the seasoned kale leaves evenly onto the prepared baking sheet. Ensure they are in a single layer to promote even cooking. Bake in the preheated oven for about 20-25 minutes, flipping the kale halfway through, until they are crispy but not burnt.
