1 large bunch of kale (curly or Lacinato)

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon sesame seeds (white or black, or a mix!)

1/2 teaspoon sea salt (adjust to taste)

A pinch of cayenne pepper (optional, for a spicy kick)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 300°F (150°C). Line two large baking sheets with parchment paper to prevent sticking.

    Prepare the Kale: Rinse the kale leaves thoroughly under cold water. Shake off the excess water and pat them dry with a clean kitchen towel or paper towels. Remove the tough stems and tear the leaves into bite-sized pieces, roughly about 2-3 inches in size.

      Make the Marinade: In a large mixing bowl, combine the sesame oil, soy sauce, rice vinegar, garlic powder, onion powder, sea salt, and cayenne pepper (if using). Whisk the mixture until it’s well blended.

        Coat the Kale: Add the kale pieces to the bowl with the marinade. With clean hands, massage the mixture into the kale leaves for about 2-3 minutes, ensuring that each piece is evenly coated. This helps to tenderize the kale, making it more flavorful.

          Add the Sesame Seeds: Sprinkle the sesame seeds over the kale and toss lightly to distribute them evenly among the leaves.

            Spread on Baking Sheets: Place the coated kale on the prepared baking sheets in a single layer. Make sure there’s enough space between the leaves to ensure they crisp up nicely. If you're using two baking sheets, you may need to bake in batches.
