Crunchy Sesame Noodle Slaw

8 oz soba noodles (or any thin noodles)

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

1/4 cup scallions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup toasted sesame seeds

1/4 cup peanuts or cashews, roughly chopped (optional)

Dressing:

1/3 cup sesame oil

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp fresh ginger, grated

1 clove garlic, minced

1 tsp chili paste or sriracha (optional for heat)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil and cook the soba noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the noodles are cooking, wash and prepare all vegetables: finely shred the green and red cabbage, julienne the carrots, red bell pepper, and cucumber, and chop the scallions and cilantro.

      Make the Dressing: In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, grated ginger, minced garlic, and chili paste, if using. Adjust the taste according to your preference.

        Combine Slaw: In a large mixing bowl, combine the cooled soba noodles, shredded cabbages, julienned carrots, bell pepper, cucumber, scallions, and cilantro. Toss well to mix all the ingredients.

          Dress the Slaw: Pour the dressing over the noodle vegetable mixture, tossing gently to ensure everything is evenly coated in the dressing.

            Add Toppings: Sprinkle the toasted sesame seeds and chopped peanuts or cashews over the top for added crunch. Mix lightly just before serving.

              Chill and Serve: For best flavors, let the slaw sit for 15-30 minutes in the refrigerator to allow the flavors to meld. Serve cold as a refreshing side dish or a light main dish.
