2 large cucumbers, peeled and diced

2 ripe avocados, pitted and chopped

1 small red onion, finely chopped

2 cloves garlic, minced

1 green bell pepper, seeded and chopped

1 large ripe tomato, chopped

3 cups vegetable broth (chilled)

2 tablespoons fresh lime juice

1 tablespoon extra virgin olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro or basil leaves for garnish

Optional: 1 jalapeño, seeded and minced (for a spicy kick)
