Ingredients

2 large cucumbers

1 ripe avocado

1 can (5 oz) tuna, drained (preferably albacore)

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon chopped fresh dill (or parsley)

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Prepare the Cucumbers: Rinse the cucumbers under cold water and cut them in half lengthwise. Using a spoon, scoop out a portion of the seeds to create a hollow boat. Set aside in a serving dish.

    Make the Tuna Mixture:

      - In a mixing bowl, mash the ripe avocado with a fork until smooth but still chunky.

        - Add the drained tuna, mayonnaise, Dijon mustard, lemon juice, chopped dill, salt, and pepper. Mix until all ingredients are well-combined and creamy.

Fill the Cucumber Boats: Spoon generous amounts of the tuna avocado mixture into each hollowed cucumber half. Ensure they are well-filled for a hearty bite.

Garnish: Top each tuna-filled cucumber with halved cherry tomatoes and, if desired, a sprinkle of sesame seeds for added crunch.

Serve: Chill for about 15 minutes before serving for optimum flavor. These delightful boats can be served as a refreshing appetizer or a light lunch!
