Ingredients

8 oz elbow macaroni or your choice of pasta

6 hard-boiled eggs, peeled and chopped

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/4 cup celery, finely chopped

1/4 cup red bell pepper, finely chopped

1/4 cup green onions, sliced

1 tablespoon fresh dill, chopped (optional)

Paprika for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain, rinse with cold water, and set aside to cool.

Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth and creamy.

Combine Ingredients: Add the chopped hard-boiled eggs, cooked pasta, celery, red bell pepper, and green onions to the dressing. If using, add the fresh dill for a burst of flavor.

Mix Thoroughly: Gently fold the ingredients together until everything is well-coated with the dressing. Be careful not to mash the eggs too much; you want to keep some chunks for texture.

Chill: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour, allowing the flavors to meld together.

Serve: Before serving, give the salad a gentle stir. Adjust seasoning if necessary. Serve chilled, garnishing with a sprinkle of paprika on top for a pop of color.
