Ingredients

2 cups fresh pineapple chunks (frozen for a thicker texture)

1 cup coconut milk (or dairy-free option)

1/2 cup sugar (or honey/agave for sweetness)

1 tsp vanilla extract

1 tsp lime juice (optional for added zing)

A pinch of salt

Instructions

Prepare the Pineapple: If using fresh pineapple, cut into chunks and freeze for at least 2 hours for a creamier texture. If using pre-frozen pineapple, proceed to the next step.

Blend the Ingredients: In a high-speed blender, combine the frozen pineapple chunks, coconut milk, sugar, vanilla extract, lime juice (if using), and a pinch of salt.

Blend Until Smooth: Pulse the blender a few times, then blend on high speed until smooth and creamy, scraping down the sides as needed. The mixture should have a thick, soft-serve consistency.

Taste and Adjust: Taste the mixture and adjust sweetness if desired by adding more sugar or honey. Blend again if you've added extras.

Serve or Freeze: Serve immediately for a soft-serve texture in ice cream bowls. For a firmer texture, transfer to an airtight container and freeze for about an hour before serving.

Garnish (Optional): Serve your Dole Whip topped with a sprinkle of shredded coconut, fresh pineapple pieces, or a maraschino cherry for an extra tropical touch!
