Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 cup cornflakes, crushed

2 large eggs

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1/2 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

Green onions, chopped, for garnish

Sesame seeds, for garnish

Cooking oil for frying

Instructions

Prepare the Chicken: Begin by tenderizing the chicken breasts using a meat mallet to an even thickness of about 1 inch to ensure even cooking. Season both sides with salt, pepper, garlic powder, and paprika.

Set Up Breading Station: In three separate shallow dishes, place the flour in one, beaten eggs in the second, and crushed cornflakes mixed with a little salt and pepper in the third.

Bread the Chicken: First, coat each chicken breast in flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the chicken breasts in the crushed cornflakes, pressing gently to adhere the crumbs.

Fry the Chicken: In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat. Once the oil is hot (around 350°F / 175°C), carefully place the breaded chicken breasts in the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and drain on a paper towel-lined plate.

Prepare the Honey Garlic Sauce: In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Stir well to combine and let it simmer for about 3-4 minutes until slightly thickened. Be sure to watch closely so it doesn’t burn!

Glaze the Chicken: Once the chicken is cooked, drizzle the honey garlic sauce over each piece generously, making sure to coat them well.

Serve: Transfer the glazed chicken to a serving platter. Garnish with chopped green onions and sprinkle sesame seeds on top for an extra crunch. Serve immediately with your choice of sides, such as steamed vegetables or rice.
