Easter Breakfast Casserole

8 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup diced cooked ham (or cooked sausage)

1 cup baby spinach, chopped

1 cup cherry tomatoes, halved

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

1 loaf of crusty bread, cut into 1-inch cubes

Fresh parsley or chives for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add the garlic powder, onion powder, dried basil, salt, black pepper, and crushed red pepper flakes (if using). Mix well.

      Layer the Ingredients: Start with a layer of the bread cubes across the bottom of the greased baking dish. Evenly distribute the diced ham (or sausage) over the bread. Then sprinkle the chopped spinach and halved cherry tomatoes on top.

        Add Cheese: Pour the egg mixture over the layered ingredients, making sure it seeps through to the bottom. Top with the shredded cheddar cheese.

          Time to Chill: Cover the baking dish with aluminum foil and let it sit in the refrigerator for at least 30 minutes (or overnight, if preferred). This allows the bread to soak up the egg mixture for a richer flavor.

            Bake the Casserole: Once ready to bake, remove the foil and place the casserole in the preheated oven. Bake for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.

              Garnish and Serve: Remove the casserole from the oven and let it cool for 5-10 minutes. Garnish with freshly chopped parsley or chives before serving. Cut into squares and enjoy your festive Easter breakfast!
