4 large whole wheat tortillas

1 cup baby spinach, washed and dried

1 cup cooked quinoa (cooled)

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/2 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper to taste

Prepare the Filling: In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, and red onion. Gently mix in the feta cheese, if using. Season with salt and pepper to taste.
