1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

2 tbsp tomato paste

2 cups beef stock

2 tsp chili powder

1 tsp cumin

1 tsp paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until they begin to soften. Add minced garlic and cook for an additional minute until fragrant.

    Brown the Beef: Increase heat to medium-high and add the ground beef to the pot. Using a wooden spoon, break it apart and cook until it’s browned and no longer pink, about 5-7 minutes. Drain any excess fat.

      Add Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes (with their juices), and tomato paste. Mix well to combine all ingredients.

        Season the Chili: Pour in the beef stock and add the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to incorporate spices evenly throughout the chili.

          Simmer: Bring the chili to a gentle boil, then reduce heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally. This will allow the flavors to meld beautifully.

            Taste and Adjust: After simmering, taste the chili and adjust seasoning if necessary. If you like it spicier, add more cayenne pepper or chili powder.
