Easy Beef Tacos

1 lb ground beef (80/20 for the best flavor)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp each of cumin, paprika, chili powder, and 1/2 tsp of salt)

1 can (15 oz) black beans, drained and rinsed

1/2 cup beef broth (or water)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

1/2 cup sour cream

1 avocado, sliced (optional)

Fresh cilantro, chopped for garnish (optional)

Lime wedges for serving

Instructions
 

Cook the beef: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and cook for about 2-3 minutes until translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.

    Brown the meat: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat if necessary.

      Season it up: Sprinkle the taco seasoning over the browned beef, mix well. Pour in the beef broth (or water), and stir. Allow the mixture to simmer for about 5 minutes until slightly thickened.

        Prepare the tortillas: While the beef is simmering, warm the tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30-60 seconds or by heating them on a dry skillet for about 15-20 seconds on each side until warm.

          Assemble the tacos: To each tortilla, add a generous spoonful of the beef mixture. Top with shredded lettuce, diced tomatoes, cheese, a dollop of sour cream, and avocado slices if desired.

            Garnish and serve: Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
