Easy Beef Tacos with Fresh Avocado Salsa

For the Beef Tacos:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and black pepper to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

Sour cream (for serving)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 small red onion, diced

1 jalapeño, seeded and finely chopped (optional for spice)

Juice of 1 lime

1/2 cup fresh cilantro, chopped

Salt to taste

Instructions
 

Prepare the Beef:

    - In a large skillet, heat a little oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened.

      - Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).

        - Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let it cook for another 2-3 minutes to allow the flavors to meld. Remove from heat.

          Make the Avocado Salsa:

            - In a medium bowl, combine the diced avocados, red onion, jalapeño (if using), lime juice, cilantro, and a pinch of salt. Gently toss to combine, taking care not to mash the avocados.

              Assemble the Tacos:

                - Heat the corn tortillas in a dry skillet or wrap them in a damp paper towel and microwave for about 30 seconds until warm.

                  - Layer each tortilla with a generous scoop of the seasoned beef, then top with shredded lettuce, diced tomatoes, and cheese.

                    - Spoon some fresh avocado salsa over the top, and add a dollop of sour cream if desired.
