1 cup fresh or frozen corn kernels

1 cup all-purpose flour

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup milk

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper to taste

1/4 cup chopped fresh parsley (optional)

Oil for frying

Prep the Corn: If using fresh corn, cut it off the cob. If using frozen corn, thaw and drain well.

    Mix Dry Ingredients: In a large bowl, combine flour, baking powder, garlic powder, onion powder, paprika, salt, and pepper. Stir until well mixed.

      Add Cheeses: Fold in the shredded cheddar and grated Parmesan cheese into the dry mixture.

        Whisk Wet Ingredients: In a separate bowl, whisk together the eggs and milk until well combined.

          Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix. Gently fold in the corn and chopped parsley, if using.

            Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until shimmering (approximately 350°F or 175°C).

              Fry Fritters: Using a tablespoon, scoop the batter and carefully drop it into the hot oil, flattening slightly with the back of the spoon. Fry in batches, being careful not to overcrowd the pan.

                Cook Until Golden: Fry each fritter for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.
