Easy Chicken Alfredo with Spinach and Peas

2 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 cups fresh spinach, washed and chopped

1 cup frozen peas (thawed)

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

8 oz fettuccine pasta

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta cooking water.

    Cook the Chicken: While the pasta is cooking, season the chicken breasts generously with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and let them rest for a few minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet used for the chicken, add the minced garlic and sauté for 1 minute until fragrant. Then add the chopped spinach and cook until wilted, about 2-3 minutes. Stir in the thawed peas and cook for another minute.

        Make the Alfredo Sauce: Reduce the heat to low and pour the heavy cream into the skillet, stirring to combine. Gradually whisk in the Parmesan cheese until melted and smooth. Add the Italian seasoning and adjust the seasoning with salt and pepper to taste.

          Combine Everything: Add the cooked fettuccine to the sauce, along with the sliced chicken. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency. Toss everything together to ensure the pasta and chicken are well coated with the sauce.
