Easy Chicken and Dumplings

For the Chicken & Soup:

1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 cup water

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

1 cup frozen peas (optional)

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1 cup milk

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened. Add the chicken breasts, thyme, rosemary, salt, and pepper. Pour in the chicken broth and water. Bring to a simmer and cook for 20-25 minutes until the chicken is cooked through.

    Shred the Chicken: Remove the chicken breasts from the pot and shred them with two forks. Return the shredded chicken back into the pot. If using frozen peas, stir them in now.

      Prepare the Dumpling Batter: In a medium bowl, combine the flour, baking powder, and salt. In another bowl, mix the melted butter and milk. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; the batter should be lumpy.

        Cook the Dumplings: Drop spoonfuls of dumpling batter over the simmering chicken soup. Do not stir! Cover the pot tightly and cook on low heat for 15 minutes, allowing the dumplings to steam and rise.

          Serve: Once the dumplings are fluffy and cooked through, ladle the chicken and dumplings into bowls. Garnish with fresh parsley and enjoy!
